Canning Altitude Adjustment



Altitude adjustment is an important consideration if you live and can food at more than 1,000 feet above sea level.

Water bath canning recipes typically call out processing times based on doing so at 0 - 1,000 feet above sea level. When you are more than 1,000 feet above sea level, you must adjust your processing time.

Pressure canning recipes typically call out for 10 pounds pressure at 0 - 1,000 feet above sea level. When you are more than 1,000 feet above sea level, you must adjust your pressure according to these table guidelines.

1,001 to 3,000 5 minutes
3,001 to 6,000 10 minutes
6,001 to 8,000 15 minutes
8,001 to 10,000 20 minutes
